Autumn is my favorite time of the year! For me, it’s a season full of nostalgia, delicious smells, and of course, wonderful food. While the presence of Halloween candy may be tempting, this healthy alternative will surely satisfy your craving for a treat! Vegan and refined sugar-free, these no-bake Pumpkin Brownie Bites are a decadent delight.

I am always thinking of new ways to enjoy pumpkin. It is such a versatile ingredient that provides a subtle sweetness and creamy consistency. The pumpkin purée in the brownie bites is not overpowering and adds a nice, fall flavor.

The preparation of this dessert is simple. You’ll only need three mixing bowls, a whisk, and your measuring tools! Because it’s a no-bake recipe, it will be ready in no time. These bites can be stored in the freezer for a quick and sweet snack.

Pumpkin Brownie Bites

Servings: About 10 bites

Ingredients

  • 1/2 cup coconut flour

  • 1/3 cup cocoa powder

  • 1/4 teaspoon of salt

  • 1/4 teaspoon of cinnamon

  • 1/2 cup of pumpkin purée

  • 1/3 cup drippy unsweetened peanut butter

  • 1/2 teaspoon of vanilla extract

  • 3 tablespoons of agave syrup

  • 1 tablespoon of coconut oil, melted

For the drizzle

  • 1/2 tablespoon of coconut oil

  • 1 ounce of dark or milk chocolate

  • 1/8 cup of unsweetened peanut butter

  • 1 tablespoon of agave syrup, optional

Instructions

1. In a medium bowl, combine the coconut flour, cocoa powder, salt, and cinnamon, and mix together. Set aside.

2. In another medium bowl, combine the pumpkin purée, peanut butter, vanilla, agave syrup, and coconut oil. Whisk until combined.

3. Next, gradually add the dry ingredients to the wet and stir using a spatula or your hands. Mix until all ingredients are incorporated.

4. Form the mixture into 1-inch balls and place in a single layer on a tray. Refrigerate the balls for about 10 minutes.

5. Meanwhile, prepare the chocolate drizzle. In a small bowl, combine all ingredients and microwave in 10 second intervals until fully melted. Stir in between intervals.

6. Remove balls from refrigerator and drizzle the chocolate mixture liberally over the bites. Refrigerate for 20 minutes to let them set, and enjoy!
