Cranberry Danishes

A simple, balanced dessert that can be enjoyed any time of day. Tart cranberries and a sweet cream cheese filling sit on top of flaky and buttery puff pastry perfect for breakfast, snack, or dessert.

Yields 6 danishes

Ingredients
• Puff pastry dough
• 1 cup of dried cranberries, rehydrated
• 8 ounces cream cheese, softened
• 3 tablespoons sugar
• 1 teaspoon vanilla extract
• 1 teaspoon cinnamon
• Pinch of ground nutmeg
• Pinch of ground ginger
• 1 tablespoon powdered sugar (optional)

Instructions
1. Preheat oven to 400 degrees Fahrenheit and line a baking tray with parchment paper.
2. Roll out pastry dough and cut in half lengthwise, then cut each half into 3 pieces to yield 6 squares.
3. Score a border around each square with a knife (about 1/2” thick) and poke inside the border with a fork 2-3 times.
4. In a medium bowl, combine cream cheese, sugar, vanilla, cinnamon, nutmeg, and ginger and mix well.
5. Add 2-3 spoonfuls of cream cheese mixture inside each border of the puff pastry squares.
6. Top mixture with 1-2 spoonfuls of cranberries.
7. Bake for 20 minutes and rotate pan halfway through.
8. Remove from oven and allow pastries to cool. Dust with powdered sugar and serve.
