Zucchini & Heirloom Tomato Tart
The perfect summer bite. This was so easy to make and turned out beautifully. Thanks to my mom for the zucchini from her lovely garden šæ
Yields 4-6 servings
Ingredients:
1 package of thawed puff pastry dough
1/4 cup mascarpone or ricotta
1/4 cup shredded mozzarella
Lemon zest
Basil leaves
5-6 slices of zucchini
5-6 slices heirloom tomato
Salt and pepper to taste
Olive oil
Red pepper chili flakes
1 beaten egg + 1 tbsp water
Instructions:
1. Score the outer edges of puff pasty and poke a few holes in the center with a fork.
2. In a bowl, mix cheeses with lemon zest, basil, salt and pepper. Spread this mixture on the pastry and add slices of zucchini and tomato, alternating between the two as you go.
3. Add salt and pepper, chili flakes and a drizzle of olive oil.
4. Brush edges with the egg wash and bake for 25-30 minutes at 400. Top with fresh basil and enjoy.
