Open-Faced Egg Salad Sandwich on Pumpernickel
A German-inspired open-faced egg salad sandwich on pumpernickel with locally made @zymbiotics_fermented_foods "zauerkraut" on the side. š
Yields 3-4 servings
Ingredients:
3-4 slices of pumpernickel
5 hard-boiled eggs, chopped
2 green onions, thinly sliced
1/2 cup sour cream
1 tablespoon Dijon mustard
1 pinch curry powder
1 pinch paprika
Salt & pepper to taste
Radish, thinly sliced (optional)
Chives, thinly chopped (optional)
Instructions:
1. Mix together eggs, green onions, sour cream, mustard, and spices in a mixing bowl.
2. Refrigerate and let stand for 20 mins. Spoon egg salad onto pumpernickel and garnish with radishes and chives.
